Terroir
Terroir equals “wine”. Terroir is the foundation. Terroir means the mutual effect of a number of factors, such as the soil, location, vine and wine-maker.
LANDSCAPE
Pálava lies in the heart of an ancient cultural landscape of South Moravia, which is one of the oldest settled areas in the country. Lily-white limestone rocks surrounded with vineyards, irises blooming on sun-lit rock steppe, oak groves, and the unique architecture of Mikulov and surrounding villages provide the landscape in Pálava's landscape with Mediterranean-like character. With the area of 83 km2, the Pálava Protected Area was established and was subsequently declared as a UNESCO biospheric site and NATURA bird reserve.
CLIMATE
During the period of droughts, as the winemaker is awaiting the rain and is observing arriving clouds with hope, the hot limestone rocks often cause the clouds to part whixh results with no rain at all. Pálava belongs to one of the hottest and driest areas in our country.
SOIL
With respect to the soil, Pálava is very complex and varied. In the environs of Mikulov, Bavory and Perná, you may find several types of soil. Limy clays and marls of the Mesozoic and Tertiary sediments gave way for heavier soils with a deep grey-and-black or brown-and-black top horizon. Loess then provided space for deep muck soils, and finally there are also shallow highly permeable and drying soils, so-called rendzina. The poorer the soil is the more valuable the wines are.
